Asparagus Pizza (with Burrata and Arugula!)

This asparagus pizza with burrata and arugula is a simple yet delicious flatbread to whip up on pizza night. It comes together quickly with either homemade crust or store-bought. With an irresistible lemon drizzle, this pizza will have you coming back for seconds, thirds, and well, now you've eaten the whole pizza.

Ingredients

  • 1 pizza crust
  • 1 Tbsp olive oil 15 mL
  • ½ lb asparagus 220 g
  • 1 cup burrata cheese 150 g
  • ¼ to ½ cup crumbled Feta cheese 40 to 80 g
  • 2 handfuls arugula
  • zest of 1/2 lemon
  • Pinch of salt and pepper

  1. Asparagus: Preheat oven to 450 degrees F (230 C). Make or prepare pizza dough, shaping into a rectangular or round shape. Rub dough with olive oil, then spread asparagus onto the dough in a single layer. Bake for 5 minutes.
  2. Cheeses: Remove pizza from oven and add the cheeses. Return to the oven and cook until cheese turns golden, 8 to 10 minutes.
  3. Serve: Top with arugula, lemon zest, salt, and pepper.

Notes

  • Storage: You can keep this pizza in the fridge in an airtight container for up to 4 days. Reheat it in the oven or the air fryer.
