ASPARAGUS WITH HOLLANDAISE SAUCE

Ingredients

For the Asparagus:
  • 1 lb 450g fresh asparagus, trimmed
  • 1 tablespoon olive oil or butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Hollandaise Sauce:
  • 3 egg yolks
  • ½ cup unsalted butter melted
  • 1 tablespoon lemon juice
  • ½ teaspoon Dijon mustard optional, for extra depth of flavor
  • ¼ teaspoon salt
  • Pinch of cayenne pepper optional, for a mild kick

Instructions

Step No.1: Prepare the Asparagus

  1. Trim the woody ends off the asparagus spears. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
Step No.2: Cook the Asparagus
  1. Blanched: Boil a pot of water and blanch the asparagus for 2-3 minutes, then transfer to an ice bath to keep them bright green.
  2. Roasted: Preheat oven to 400°F (200°C) and roast the asparagus on a baking sheet for 8-10 minutes.
  3. Steamed: Steam for 4-5 minutes until tender but still crisp.
Step No.3: Make the Hollandaise Sauce
  1. In a heatproof bowl, whisk egg yolks, lemon juice, Dijon mustard, salt, and cayenne pepper. Place the bowl over a simmering pot of water (double boiler method) and whisk constantly while slowly adding melted butter. Continue whisking until the sauce is smooth and thickened.
Step No.4: Assemble and Serve
  1. Plate the warm asparagus and drizzle the Hollandaise sauce generously over the top. Serve immediately for the best flavor.

Notes

  • Hollandaise Too Thick? Add a teaspoon of warm water to loosen it.
  • Avoid Overcooking: Asparagus should be tender but still slightly crisp.
  • Quick Blender Hollandaise: Blend egg yolks and lemon juice, then slowly drizzle in hot melted butter while blending.
  • Garlic Butter Asparagus: Swap Hollandaise for garlic butter sauce.
