- 1 tablespoon lemon juice

Instructions
Step No.1: Prepare the Asparagus
- Trim the woody ends off the asparagus spears. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
Step No.2: Cook the Asparagus
- Blanched: Boil a pot of water and blanch the asparagus for 2-3 minutes, then transfer to an ice bath to keep them bright green.
- Roasted: Preheat oven to 400°F (200°C) and roast the asparagus on a baking sheet for 8-10 minutes.
- Steamed: Steam for 4-5 minutes until tender but still crisp.
Step No.3: Make the Hollandaise Sauce
- In a heatproof bowl, whisk egg yolks, lemon juice, Dijon mustard, salt, and cayenne pepper. Place the bowl over a simmering pot of water (double boiler method) and whisk constantly while slowly adding melted butter. Continue whisking until the sauce is smooth and thickened.
Step No.4: Assemble and Serve
- Plate the warm asparagus and drizzle the Hollandaise sauce generously over the top. Serve immediately for the best flavor.

- Hollandaise Too Thick? Add a teaspoon of warm water to loosen it.
