Ingredients

  • 1 pound (500g) asparagus spears trimmed
  • cooking spray
  • 1/3 cup panko or breadcrumbs
  • 1/4 cup Parmesan Cheese grated
  • 2 teaspoons lemon rind grated
  • 1 teaspoon canola oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • 2 tablespoons lemon juice
  • 1 teaspoon unsalted butter melted

Instructions

  1. Preheat the oven to 400°F (200°C). In a bowl, combine Panko (or breadcrumbs), Parmesan cheese, lemon rind, canola oil, pepper, and salt.
  2. Arrange the asparagus on a foil-lined baking sheet and bake for 8 minutes. Sprinkle the breadcrumb mixture over the asparagus and bake for an additional 4 minutes. Remove from the oven and drizzle with lemon juice and melted butter.
