Ingredients

  • 6 anchovies in oil
  • 2 egg yolks*
  • 3 garlic cloves
  • ¼ cup lemon juice
  • 2 teaspoons Dijon mustard
  • ½ cup olive oil
  • ½ cup grated Parmesan cheese

Instructions

  1. In a food processor add the 6 anchovies in oil, 2 egg yolks*, 3 garlic cloves, and ¼ cup lemon juice. Pulse until smooth and creamy.
  2. Add in the 2 teaspoons dijon mustard, ½ cup olive oil, and ½ cup grated parmesan cheese. Continue to pulse until smooth.
  3. Serve right away or store in an airtight container in the fridge.

Notes

  • *If you don't want to use raw eggs, greek yogurt or mayonnaise is a good substitute.
