Ingredients
- 6 anchovies in oil
- 2 egg yolks*
- 3 garlic cloves
- ¼ cup lemon juice
- 2 teaspoons Dijon mustard
- ½ cup olive oil
- ½ cup grated Parmesan cheese
Instructions
- In a food processor add the 6 anchovies in oil, 2 egg yolks*, 3 garlic cloves, and ¼ cup lemon juice. Pulse until smooth and creamy.
- Add in the 2 teaspoons dijon mustard, ½ cup olive oil, and ½ cup grated parmesan cheese. Continue to pulse until smooth.
- Serve right away or store in an airtight container in the fridge.
Notes
- *If you don't want to use raw eggs, greek yogurt or mayonnaise is a good substitute.
