Authentic Machaca Con Huevos
Authentic Machaca Con Huevos blends shredded dried beef (machaca) with sautéed onions, Anaheim chile, tomatoes, and scrambled eggs. The eggs add a tender texture that complements the savory and slightly spicy machaca mixture. This dish is hearty and flavorful, often served warm with tortillas and beans as a filling breakfast or brunch option.
Ingredients
- 5 egg large
- salt to taste
- black pepper to taste
- 2 Tbsp vegetable oil or canola oil
- 1 cup onion chopped into small squares, red, yellow or white
- 1 Anaheim chile verde chopped into small squares
- 2 Roma tomato chopped into small squares, medium
- 2 cups machaca meat 70 grams
Instructions
- In a small bowl, add the 5 eggs and season with salt & pepper to taste. Scramble with a fork and set aside
- In a large skillet, heat two tablespoons of oil over medium heat. Add the onions and chile verde. Cook for 3 minutes or until soft.
- Add the tomatoes and cook and cook for two more minutes. Then add the machaca and mix to combine well.
- Lower the heat to medium and add the scrambled eggs and cook until eggs are no longer runny.
- Serve warm with tortillas and beans
