  • 5 egg large
  • salt to taste
  • black pepper to taste
  • 2 Tbsp vegetable oil or canola oil
  • 1 cup onion chopped into small squares, red, yellow or white
  • 1 Anaheim chile verde chopped into small squares
  • 2 Roma tomato chopped into small squares, medium
  • 2 cups machaca meat 70 grams

Instructions

  1. In a small bowl, add the 5 eggs and season with salt & pepper to taste. Scramble with a fork and set aside
  2. In a large skillet, heat two tablespoons of oil over medium heat. Add the onions and chile verde. Cook for 3 minutes or until soft.
  3. Add the tomatoes and cook and cook for two more minutes. Then add the machaca and mix to combine well.
  4. Lower the heat to medium and add the scrambled eggs and cook until eggs are no longer runny.
  5. Serve warm with tortillas and beans
