Avocado Baked Eggs with Bacon

Super simple to put together these avocados are filled with bacon and eggs then baked to create a delicious low carb friendly breakfast dish!

Ingredients

  • 2 large avocados
  • 4 slices Bacon bacon
  • 4 large eggs
  • ½ teaspoon bagel seasoning

Instructions

  1. Preheat oven to 425℉ degrees. Line a baking sheet with parchment paper or spray with a non stick spray. Set aside.
  2. In a large skillet cook the bacon most of the way. Don't cook completely because it will bake in the oven also.
  3. Cut the avocados in half and remove the pit. Spoon out the avocado around the area the pit was to make the crater larger. Set the avocado aside to enjoy on it's own or as guacamole.
  4. Cut the cooked bacon strips in half and place two halves in each avocado.
  5. Crack one egg into each avocado. It's ok if the white part runs out of the avocado slightly, just keep the yolk in the crater.
  6. Bake for 12-15 minutes until eggs cooked. The yolk will jiggle when if you shake the pan, but whites will be set.
  7. Remove and allow to cool for a couple minutes, be careful as the avocado skin will be hot.
  8. Sprinkle with everything bagel seasoning or salt and pepper to taste.

Notes

  • Serve immediately. It is not recommended to make these ahead of time or to reheat.
