Avocado Dressing
This Avocado Dressing blends ripe avocado, olive oil, fresh herbs, lime juice, and garlic into a creamy, bright green sauce. It can be adjusted for thickness with water and seasoned with salt and pepper to taste. The dressing balances the richness of avocado with citrus tang and herbaceous freshness, making it a versatile addition to salads, bowls, or as a dip with a smooth texture and refreshing flavor.
Ingredients
- 1 avocado
- 1/4 cup olive oil
- 1/4 cup water or more for thinner consistency
- 1/4 cup cilantro or basil or parsley leaves
- 1 lime juiced
- 1-2 garlic minced, clove
- salt to taste
- black pepper to taste
Instructions
- Add all of the ingredients to a food processor. Blend until creamy and feel free to add more water for a thinner consistency.
Notes
- The dressing yields about one cup and can be refrigerated for up to 5 days in an airtight container.
- Using only herb leaves, not stems, helps prevent bitterness, especially with cilantro.
- Add 1-2 teaspoons of sweetener if the dressing tastes slightly bitter due to the herbs used.
