  • 1/4 cup olive oil
  • 1/4 cup water or more for thinner consistency

  • 1 lime juiced
  • 1-2 garlic minced, clove
  • salt to taste
  • black pepper to taste

Instructions

  1. Add all of the ingredients to a food processor. Blend until creamy and feel free to add more water for a thinner consistency.

Notes

  • The dressing yields about one cup and can be refrigerated for up to 5 days in an airtight container.
  • Using only herb leaves, not stems, helps prevent bitterness, especially with cilantro.
  • Add 1-2 teaspoons of sweetener if the dressing tastes slightly bitter due to the herbs used.
