Avocado Egg Rolls with Sweet and Spicy Dipping Sauce

These Avocado Egg Rolls combine creamy avocado, tangy lime juice, and savory sun-dried tomatoes wrapped in crisp egg roll wrappers. Baking or air frying the rolls yields a crunchy exterior that contrasts with the smooth filling. A sweet and spicy dipping sauce made with mayonnaise, sweet chili sauce, and sriracha complements the mild avocado filling, making this appetizer both flavorful and satisfying.

Ingredients

  • 12 ounces avocado Hass, from 3 medium, cubed
  • 2 tablespoons mayonnaise
  • lime juice juice from 1-2 small limes
  • 1 tablespoon sweet chili sauce
  • ¼ cup sun-dried tomato packed in oil, drained, chopped
  • sriracha plus more to taste, a few dashes
  • 2/3 cup red onion diced
  • 1/3 cup cilantro chopped
  • 1 teaspoon kosher salt
  • black pepper freshly ground
  • 10 egg roll wrappers
  • water small bowl for sealing
  • olive oil spray or canola oil spray

Instructions

    Cup of Yum
  1. In a medium bowl, combine avocado, lime juice, sundried tomatoes, onion, cilantro, salt and pepper, to taste. Gently toss to combine.
  2. Preheat the oven to 400F. Spray a sheet pan with oil.
  3. One at a time, place egg roll wrapper on a clean surface, points facing top and bottom like a diamond.
  4. Transfer the egg rolls to the baking sheet and cook until browned and crisp, about 16 to 18 minutes, turning halfway.
  5. Spoon ¼ cup mixture onto the bottom third of the wrapper.
  6. Dip your finger in a small bowl of water and run it along the edges of the wrapper.
  7. Lift the point nearest you and wrap it around the filling.  Fold the left and right corners in toward the center and continue to roll into a tight cylinder.
  8. Set aside and repeat with remaining wrappers and filling.
  9. Spray all sides of the egg rolls with oil.
  10. Preheat the air fryer to 400F. In batches, cook 400F for 6 minutes, turning halfway through, or until golden.
  11. Meanwhile, in a small bowl, combine mayonnaise, sweet chili sauce and sriracha and serve on the side for dipping.
