Avocado Hummus

This Avocado Hummus is creamy, savory, slightly tangy, and absolutely mouthwatering. It's both healthy and yummy; one of my favorite clean snacks!

Ingredients

  • 1 large avocado ripe
  • 1 cup garbanzo beans drained (homemade or canned, cooked
  • 3 TB tahini sesame paste found in ethnic aisles of major grocery stores, real
  • 2-3 TB lemon juice depending on how lemony you want it, fresh
  • ½ tsp salt plus more to taste
  • 2 cloves garlic peeled and halved, fresh
  • 1 TB extra virgin olive oil
  • ½ tsp paprika
  • ½ tsp cumin
  • parsley chopped, few sprigs, or cilantro
  • ¼ tsp cayenne pepper optional

Instructions

  1. Place all ingredients except for avocado in a food processor (or powerful blender.) Peel and halve the avocado, and add to the food processor.
  2. Process until smooth and well blended.
  3. Add more salt and/or cayenne pepper to taste, if needed.
  4. Serve with tortilla chips, pita chips, or use in place of mayo in your sandwich (delish!)
  5. Keeps well with cling wrap placed directly over the top surface of dip, in fridge.
