Ingredients

  • 1/2 avocado (more if you prefer)
  • 1 Roma tomato diced, small
  • 1 green onion (sliced)
  • 2 tsp. nutritional yeast
  • Seasonings of choice (taco seasoning, smoked paprika, cumin, garlic powder, etc.)
  • salsa I like Blender Salsa, to taste
  • 1 tortilla gluten-free if desired, large

Instructions

  1. On one half of the tortilla, smash avocado with a fork. Sprinkle nutritional yeast and any seasonings on top. Add tomato, green onions, and salsa if using.
  2. Fold over the top half of the tortilla, and place on a skillet over medium heat.
  3. Heat for a few minutes on each side until warmed through.

Notes

  • For gluten-free preference, use a certified gluten-free tortilla.
  • Seasonings like taco spice or smoked paprika contribute savory depth but can be adjusted to taste.
  • Salsa adds brightness and moisture, enhancing the quesadilla’s flavors.
  • Cooking only until warmed through preserves avocado freshness.
