Avocado Quesadilla

This Avocado Quesadilla features smashed avocado, diced tomato, green onion, nutritional yeast, and seasonings spread on a large tortilla folded and warmed until heated through. The filling combines creamy avocado and fresh vegetables with a savory, slightly cheesy flavor from nutritional yeast, served with salsa for added zest.

Description

The recipe uses ripe avocado smashed to a spreadable consistency, then layered with diced Roma tomato, thinly sliced green onion, and nutritional yeast, along with optional seasonings such as taco spice, smoked paprika, or cumin for extra flavor. The mixture is spread on half of a tortilla, which is then folded over to enclose the filling.

Cooking takes place on a skillet over medium heat, heating the quesadilla on each side just until warmed through and slightly toasted, ensuring the ingredients meld without losing freshness. Salsa serves as a complementary condiment adding moisture and tang.

This quesadilla is a quick, vegetarian-friendly snack or light meal featuring creamy, fresh ingredients balanced with a crispy tortilla exterior. The recipe notes a gluten-free version can be made using appropriate tortillas.
