Ingredients
- 2-3 avocados
- 1/2 English cucumber
- 2 roma tomatoes
- 1/4 red onion
- 3/4 teaspoon salt (plus more to taste)
- freshly cracked black pepper
- Cotija cheese (or Feta)
- freshly chopped cilantro (for garnish)
For the Lime Cilantro Dressing:
- 1/4 cup olive oil
- juice of 1 lime (1 tablespoon+)
- 1/2 Jalapeno pepper
- 1 garlic clove
- 10-15 sprigs cilantro
- 1/2 teaspoon salt
- freshly cracked black pepper
Instructions
- Give the cucumber, cilantro and tomatoes a good rinse.
- Finely chop 1/2 English cucumber, 2 Roma tomatoes, 1/4 red onion, and the flesh of 2-3 avocados. (I used 3 smaller avocados).
- Add to a mixing bowl along with 3/4 teaspoon salt and some freshly cracked black pepper. Combine well and take a taste. This will give you an idea of how much dressing you'll need.
- Add 2-3 tablespoons Lime Cilantro Dressing (or more) and mix well.
- Top with a sprinkling of Cotija cheese and freshly chopped cilantro. Serve immediately.
- For the Lime Cilantro Dressing, add 1/4 cup olive oil to a blender or food processor along with the juice of 1 lime, 1/2 jalapeno pepper, 1 garlic clove, 10-15 sprigs cilantro, 1/2 teaspoon salt, and some freshly cracked black pepper. Combine well.
Cup of Yum
Notes
- I think this dish tastes best with just a hint of dressing so I only added 2-3 tablespoons of the Lime-Cilantro Dressing, but you are welcome to add more if it doesn't seem like enough.
- Sometimes the Lime-Cilantro Dressing needs a little tweaking to find the right balance between the oil and the lime juice. If it’s too tart for your taste, add a bit more oil. If it’s too oily for your taste, add a bit more lime juice.
