Avocado Sauce

Recipe video above. A terrific bright sauce with natural richness from avocado! Use for dipping and dolloping for all things Mexican - quesadillas, nachos, tacos, burritos - or for chips, crackers, vegetable sticks.

Ingredients

  • 1 large , ripe avocado
  • 1/3 cup sour cream or yoghurt
  • 1/2 small clove of garlic
  • Juice of 1/2 lemon OR 1 lime
  • 1 - 2 tbsp olive oil
  • 1/2 cup (packed) coriander / cilantro, roughly chopped
  • salt and pepper to taste

Instructions

  1. Combine all ingredients in a food processor, blend until very smooth. (Or use a stick blender). Use water to adjust consistency as required.
  2. Adjust lemon or lime as required, and add salt to taste (bearing in mind saltiness of the food you are serving it with). Should have a bit of tang if intended to be paired with rich, bold flavoured food like Mexican food.
  3. Keeps for 4 days in an airtight container - and stays green!
