Avocado Toast with Egg

Ingredients

  • 2 eggs large
  • 2 lices sourdough bread
  • 1/2 lime juiced
  • 1 Tablespoon olive oil or avocado oil
  • lemon pepper to taste
  • kosher salt to taste
  • pepper to taste
  • 2 Tablespoons cilantro

Instructions

  1. Slice avocado in half and remove pit. Slice avocado in the skin and with a spoon gently remove the slices and set aside.
  2. Heat oil in a 8-inch skillet over medium low. Crack eggs into the skillet. Turn down the heat and cook for 2-3 minutes or until the whites are set. For firmer yolk place a lid on the skillet until whites are set. Sprinkle with kosher salt and pepper.
  3. While eggs are cooking toast sourdough bread or grain free bread.
  4. Place avocado slices on the bread and top with cooked egg.
  5. Finish with lemon pepper and cilantro.
