Ingredients

  • 1/3 cup extra-virgin olive oil
  • 2 lemons , juiced and zested
  • 1/2 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 3 ripe avocados , cubed
  • 2 cups cherry tomatoes , halved
  • 1 cucumber , cut in half lengthwise then sliced
  • 1 cup sweet corn , fresh or thawed
  • 1/4 cup cilantro , chopped

Instructions

  1. In a large bowl, whisk together oil, lemon juice, cumin, salt and pepper.
  2. Add in the diced avocados, tomatoes, cucumber, corn, and cilantro and toss gently to combine.
  3. Best served at room temperature or bring to room temperature after refrigerating.
