Ingredients
- 1/3 cup extra-virgin olive oil
- 2 lemons , juiced and zested
- 1/2 teaspoon cumin
- 1 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 3 ripe avocados , cubed
- 2 cups cherry tomatoes , halved
- 1 cucumber , cut in half lengthwise then sliced
- 1 cup sweet corn , fresh or thawed
- 1/4 cup cilantro , chopped

Instructions
- In a large bowl, whisk together oil, lemon juice, cumin, salt and pepper.
- Add in the diced avocados, tomatoes, cucumber, corn, and cilantro and toss gently to combine.
- Best served at room temperature or bring to room temperature after refrigerating.
