Baby Lamb Chops with Yogurt Mint Sauce

My kids adored this recipe! I think it's a great way to introduce a food you might not be familiar with.

Ingredients

  • 1 Cup yogurt
  • 2 tablespoons fresh mint, chopped
  • pinch of kosher salt
  • 1 tablespoon lime juice
  • 1 small garlic clove, minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1 tablespoon vegetable or canola oil
  • 1 1/2 pounds Individual Baby Lamb Chops (cut into single chops)
  • 2 teaspoons kosher salt

Instructions

    Cup of Yum
  1. Place the first 7 ingredients in a bowl, stir to combine and set aside.
  2. Season the lamb chops with salt on both sides.
  3. Heat 1 tbsp of oil in an ovenproof large sauté pan over medium-high heat and cook lamb chops for 4 minutes on each side (for medium to medium rare).
  4. Allow the lamb to rest for 5 minutes.
  5. Serve with sauce.
