Ingredients

  • 13 ounce pizza dough homemade or store bought
  • 1 tablespoon corn meal
  • 8 ounce fresh Mozzarella cheese thin slices or 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes cut into half
  • 8 bacon slices cut into 1 inch pieces fried until golden brown
  • 1 ½ tablespoon olive oil
  • 2 garlic cloves minced
  • salt & pepper
  • 3 green onions chopped
  • 2 tablespoon fresh parsley
  • ¼ teaspoon crushed red pepper flakes

Instructions

    Cup of Yum
  1. Mix olive oil and minced garlic in a bowl. Keep aside.
  2. Make pizza dough at home with just 5 minutes prep work or use store bought refrigerated pizza crust.
  3. Lightly knead dough (homemade) and divide into 4 equal portions. If using store bought, unroll refrigerated pizza.
  4. Sprinkle little cornmeal on baking sheet or pizza stone.
  5. Work on pizza dough by stretching and pulling it to shape it. Prick thoroughly with fork.
  6. Brush olive oil garlic mix.
  7. Bake in pre-heated oven at 450F for about 3-4 minutes or until pizza crust is lightly golden brown.
  8. Add toppings of your choice.
  9. Sprinkle half of shredded mozzarella cheese, cherry tomatoes halves, and crispy bacon bits on top.
  10. Bake in the oven at 450F for 2 minutes or until the cheese melts.
  11. Remove pizza from oven, sprinkle remaining cheese on top. Crack 2-4 eggs on top of the pizza between the shredded cheese.
  12. Tip: adding little shredded cheese just before you crack open eggs helps make a 'nest' for eggs to sit in and the egg don't slide off.
  13. Season with salt and pepper to taste. Sprinkle half of the green onion.
  14. Bake at 450F for 7 to 9 minutes of until egg white is set and cooked. You can adjust the time depending on how you like your eggs. If you like runny yolk eggs, bake for less time and for fully cooked eggs increase time in the oven.
  15. Garnish with fresh parsley, extra green onions, crushed red pepper flakes. Cut into slices and enjoy!
