Bacon Avocado Pasta

An easy 20 minute pasta dish loaded with fresh avocado, crisp bacon and Parmesan goodness!

Ingredients

  • 12 ounces fusili pasta
  • 4 lices Bacon diced
  • 2 avocado halved, seeded, peeled and diced
  • 2 Roma tomato diced
  • ⅓ cup red onion diced
  • ¼ cup basil chiffonade, leaves
  • ¼ cup Parmesan Cheese grated
  • ¼ cup olive oil
  • 2 tablespoons lemon juice or more, to taste, freshly squeezed
  • 1 tablespoon lemon zest
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground

Instructions

  1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  2. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  3. In a large bowl, combine pasta, bacon, avocado, tomatoes, onion and basil. Stir in Parmesan, olive oil, lemon juice, lemon zest, salt and pepper, to taste.
  4. Serve hot or cold, garnished with Parmesan, if desired.
