Ingredients

  • 1 pound loaf sourdough bread cubed and dried out, 16-ounces
  • 1 pound Bacon diced
  • 1 large sweet onion diced
  • 3 cloves garlic minced
  • 1 tablespoon minced fresh basil
  • 1 tablespoon minced fresh Rosemary
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon minced fresh sage
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 (15 ounce) can sweet corn drained
  • 2.5 cups chicken stock

Instructions

    Cup of Yum
  1. Preheat oven to 350 degrees F and spray a 9x13 casserole dish with non-stick spray.
  2. Place cubed bread on a large baking sheet and cook 10-12 minutes, until bread is dry and toasted. Set aside.
  3. In a 12-inch skillet, add diced bacon and set over medium-high heat. Cook the bacon until it’s crispy and browned.
  4. Remove the bacon and place it onto a paper towel-lined plate. Remove all but about 2 tablespoons of the bacon grease from the pan.
  5. Add the pan back to the heat and add in the onions. Cook for about 10 minutes while the onions soften and start to get soft and slightly brown.
  6. Add in the garlic, basil, rosemary, sage, thyme, kosher salt, black pepper, and drained corn.
  7. Remove from the heat and stir to combine.
  8. In a large bowl add bread, the mixture from the pan, cooked bacon, and chicken stock. Stir to combine or until the bread is slightly moistened but not soaking wet or sticky.
  9. Add to the prepared pan and cover stuffing with foil or a lid and bake for 30 minutes. Remove the foil cover and bake for 30 minutes more or until the top of the stuffing is crispy and golden brown.
