Ingredients
for the creamed spinach
- 1 tablespoon olive oil
- 6 cups baby spinach washed and roughly chopped
- 2 garlic sliced, cloves
- 2 tablespoons sour cream
- lemon juice to taste, squeeze
- black pepper to taste
- salt to taste
to serve
- toast of your choice
- streaky bacon crispy
- egg fried or poached
Instructions
- Heat the oil in a large frying pan then add the baby spinach and garlic and allow to cook until the baby spinach has wilted.
- Drain excess liquid then add the sour cream, lemon juice, salt and pepper and mix through.
- Top the toast with a few spoonfuls of spinach, streaky bacon and a fried egg.
- Serve immediately.
