Ingredients

for the creamed spinach
  • 1 tablespoon olive oil
  • 6 cups baby spinach washed and roughly chopped
  • 2 garlic sliced, cloves
  • 2 tablespoons sour cream
  • lemon juice to taste, squeeze
  • black pepper to taste
  • salt to taste
to serve
  • toast of your choice
  • streaky bacon crispy
  • egg fried or poached

Instructions

    Cup of Yum
  1. Heat the oil in a large frying pan then add the baby spinach and garlic and allow to cook until the baby spinach has wilted.
  2. Drain excess liquid then add the sour cream, lemon juice, salt and pepper and mix through.
  3. Top the toast with a few spoonfuls of spinach, streaky bacon and a fried egg.
  4. Serve immediately.
