Bacon Jam
Bacon Jam is a savory-sweet condiment made by cooking small pieces of thick-cut bacon with onions, garlic, brown sugar, and vinegar until it reaches a thick, jam-like consistency. The combination of bacon's crispiness softened by slow cooking and the balance of tangy and sweet flavors creates a rich, spreadable mixture that complements sandwiches, cheeses, or crackers. This jam can be served warm or at room temperature and stored for later use, making it a versatile addition to many dishes.
Ingredients
- 1 pound Bacon thick cut, cut into small pieces
- 2 large onion finely chopped, yellow
- 4 garlic minced, cloves
- 1/3 cup brown sugar light or dark
- 1/4 cup apple cider vinegar
- 1/4 cup balsamic vinegar
- 2 teaspoons thyme more for garnish, fresh
Instructions
- Cut the bacon into small pieces.
- Add the bacon to a large nonstick skillet over medium-high heat and cook until browned and crisp.
- Transfer the bacon to a plate. In the same skillet, reserve about 2 tablespoons of the bacon grease and add the finely chopped onions to the pan. Cook the onions over medium-high heat until they are softened and just starting to turn brown.
- Add in the garlic and cook for one minute.
- Add the brown sugar, apple cider vinegar, and balsamic vinegar to the pan and cook everything together for 5 minutes.
- Add the cooked bacon to the pan and mix everything together. Continue to cook everything on medium heat for about 20 minutes. The liquids should be absorbed and cooked out and you will be left with a jam-like consistency in the pan.
- Serve immediately or save for later. It can be served warm or at room temperature.
