Description
Bacon Jam brings together thick-cut bacon, onions, garlic, and a blend of brown sugar, apple cider vinegar, and balsamic vinegar. The bacon is first browned until crisp, then set aside while its rendered fat is used to soften the onions and garlic. Adding sugar and vinegars builds a balance of sweetness and tang. The bacon is returned to the pan, and the mixture is cooked further until most of the liquid has evaporated, leaving a thickened jam-like texture. This process concentrates flavors and softens the ingredients into a spreadable form.
The resulting jam has a hearty, smoky backbone from the bacon paired with a subtle sweetness and acidity from the vinegars and sugar. Its texture is rich and sticky, ideal for layering on toast or sandwiches, or serving alongside cheese. It can also be used to add flavor to burgers or grilled meats.

Ingredients
- 1 pound Bacon thick cut, cut into small pieces
- 2 large onion finely chopped, yellow
- 4 garlic minced, cloves
- 1/3 cup brown sugar light or dark
- 1/4 cup apple cider vinegar
- 1/4 cup balsamic vinegar
- 2 teaspoons thyme more for garnish, fresh
Instructions
- Cut the bacon into small pieces.
- Add the bacon to a large nonstick skillet over medium-high heat and cook until browned and crisp.
- Transfer the bacon to a plate. In the same skillet, reserve about 2 tablespoons of the bacon grease and add the finely chopped onions to the pan. Cook the onions over medium-high heat until they are softened and just starting to turn brown.
- Add in the garlic and cook for one minute.
- Add the brown sugar, apple cider vinegar, and balsamic vinegar to the pan and cook everything together for 5 minutes.
- Add the cooked bacon to the pan and mix everything together. Continue to cook everything on medium heat for about 20 minutes. The liquids should be absorbed and cooked out and you will be left with a jam-like consistency in the pan.
- Serve immediately or save for later. It can be served warm or at room temperature.
