Bacon Jam

Bacon Jam is simple to make and delicious. It pairs perfectly with an assortment of cheese and crackers, grilled cheese, burgers and more.

Ingredients

  • 12 ounces thick cut bacon chopped
  • 2 sweet onions diced into small pieces
  • 1/4 cup sherry vinegar
  • 1 Tablespoon balsamic vinegar
  • 1/2 cup brown sugar
  • 1/2 cup water

Instructions

  1. Heat the bacon in a large frying pan over medium high heat for 7-10 minutes until the bacon is cooked through and slightly crispy.
  2. Use a slotted spoon to move the bacon from the pan to a plate lined with a paper towel.
  3. Remove all the bacon grease from the pan except for approximately 1 tablespoon.
  4. Add the diced onions to the pan with the bacon grease.
  5. Sauté for approximately 4-5 minutes until the onions are translucent.
  6. Mix the bacon back into the pan and stir in the sherry vinegar, balsamic vinegar, brown sugar and water.
  7. Bring the mixture to a low boil and cook for 10-15 minutes until the mixture is thick and dark.
  8. Remove from heat and let the mixture cool completely.
  9. Then the jam is ready to serve and enjoy!

Notes

  • Refrigerate the leftovers in an airtight container for up to 1 week.  Reheat before serving the leftovers.
