Bacon, Mushroom, Spinach Pasta

This Bacon, Mushroom, Spinach Pasta makes dinner time super easy! Delicious, filling, and full of flavour, it takes less than 30 minutes to make!

Ingredients

  • 4-6 strips Bacon
  • 3 shallots diced or sliced
  • 4 cloves garlic chopped
  • 227 grams mushrooms
  • 1/2 cup pasta water
  • 400 grams pasta
  • 1 cup peas fresh or frozen
  • 3 cups spinach roughly chopped if desired
  • 1/4 cup heavy cream
  • 1/4 cup parmesan

Instructions

  1. Bring a pot of water to a boil and add in your pasta when ready. Cooking until al dente (see your pasta container for instructions).
  2. While the water is boiling, in a medium sized pan, fry your bacon until crispy.
  3. Once done, set it aside, keeping the bacon fat in the pat, and sauté your shallots and garlic until softened.
  4. Next, add in the mushrooms, continuing to sauté.
  5. By this time, your pasta should be done. Add a little bit of pasta water to the pan to deglaze if needed. If not, add your pasta into the pan, alongside the peas. Then stir in the spinach.
  6. Pour in the reserved pasta water, heavy cream, and parmesan. Stir to combine and to coat the pasta with the sauce.
  7. Top it off with the crispy bacon and serve.
