Ingredients
- 4-6 strips Bacon
- 3 shallots diced or sliced
- 4 cloves garlic chopped
- 227 grams mushrooms
- 1/2 cup pasta water
- 400 grams pasta
- 1 cup peas fresh or frozen
- 3 cups spinach roughly chopped if desired
- 1/4 cup heavy cream
- 1/4 cup parmesan
Instructions
- Bring a pot of water to a boil and add in your pasta when ready. Cooking until al dente (see your pasta container for instructions).
- While the water is boiling, in a medium sized pan, fry your bacon until crispy.
- Once done, set it aside, keeping the bacon fat in the pat, and sauté your shallots and garlic until softened.
- Next, add in the mushrooms, continuing to sauté.
- By this time, your pasta should be done. Add a little bit of pasta water to the pan to deglaze if needed. If not, add your pasta into the pan, alongside the peas. Then stir in the spinach.
- Pour in the reserved pasta water, heavy cream, and parmesan. Stir to combine and to coat the pasta with the sauce.
- Top it off with the crispy bacon and serve.
