Bacon Wrapped Brussels Sprouts

Bacon Wrapped Brussels Sprouts make for a great party appetizer or fun side dish for dinner at home. Serve with my favorite almond butter dressing as a dipping sauce! Paleo-friendly.

Ingredients

  • 1 pound bacon*; about 10 long strips
  • 1 pound brussels sprouts; washed dried and trimmed
  • salt & pepper
  • 2 TBS balsamic vinegar optional but I like the extra flavor!
  • balsamic almond butter dressing

Instructions

  1. Preheat oven to 400ºF .
  2. Lay out bacon strips on cutting board and cut in half; place on rimmed baking sheet.
  3. Cut brussels sprouts in half, lengthwise. Next place brussels sprouts cut side up, then wrap bacon around brussels sprouts placing seam side down on baking sheet.
  4. Brush balsamic vinegar on top of bacon.
  5. Bake for about 25 minutes, rotating pan halfway through baking time.
  6. Meanwhile, make the balsamic almond butter dressing for dipping.
  7. Allow bacon wrapped brussels sprouts to cool on pan before transferring to serving tray with dip. Enjoy!

Notes

  • *Use no sugar added bacon if looking for Whole30 compliant.
