Bacon Wrapped Chicken With Dry Rub and BBQ Sauce
This recipe features chicken leg quarters seasoned with a dry barbecue spice rub and wrapped in bacon for added flavor and juiciness. The chicken cooks on a foil-lined grill until nearly done, then gets coated with a sweet and spicy BBQ sauce before finishing with a brief direct grilling. Pineapple skewers with brown sugar and coconut flakes provide a sweet side complement.
