- 8-12 lices Bacon
- pineapple prepared as skewers
- 1 pineapple 24 chunks
- 8 skewers
- brown sugar
- coconut flakes
Instructions
- Heat grill on medium heat.
- Generously season chicken with spice rub and wrap each piece of chicken with 2-3 slices of bacon.
- Place a sheet of foil over the grates and place chicken on foil. Cook meat until it reaches 160 degrees Fahrenheit (about 20-30 minutes, turning once). Coat chicken with Stubb's Sticky Sweet BBQ Sauce and place directly on grill grates. Grill for 30-60 seconds on each side. Remove from grill.
- For Pineapple Skewers thread three chunks on each skewer. Sprinkle with brown sugar (optional) and grill for 4-8 minutes. Remove from heat and sprinkle with coconut flakes.
