FOR THE MARINADE

  • 2-3 tablespoons olive oil
  • 2 prigs fresh rosemary chopped
  • 1-2 prigs fresh thyme chopped
  • ¼-½ teaspoon oregano
  • ¼ teaspoon salt

FOR THE MEAT MIXTURE

  • ½ pound ground pork
  • ½ pound ground beef*
  • ½ teaspoon oregano
  • ¼ teaspoon salt (or to taste depends on how salty the bacon or pancetta is)
  • 10-15 lices thin slices of bacon or pancetta

*It’s best to use a ground beef that is 80% lean and 20% fat.

FOR THE MARINADE

  1. In a small bowl mix together olive oil, chopped rosemary, thyme, oregano and salt, set aside.

FOR THE MEAT SKEWERS

  1. In a medium bowl mix together ground pork, ground beef, oregano and salt.
  2. Form into the shape of a sausage. Wrap well and tightly with bacon or pancetta. Place skewer down the center.
  3. Cook on a pan grill or barbecue until cooked. (low - medium heat). Brush both sides with meat sauce before and after grilling. Serve immediately. Enjoy!

FOR A SIMPLE SALAD

  1. Your choice of tomatoes, seeded if desired, toss with 2-3 tablespoons of olive oil, 1/4 - 1/2 teaspoon oregano, salt to taste and 5-7 fresh basil leaves chopped, you could also add some chopped celery and or onion, add a little balsamic vinegar if desired.

Notes

  • If you use wooden skewers be sure to soak them in water first, this will keep them from burning while grilling. Soaking for about 30 minutes should do it.
  • Store any leftover skewers in an airtight container and refrigerate. They can be re-heated in a low oven. They will keep for up to 2 days in the fridge.
  • Pork is cooked when it reaches the internal temperature of 150-160F.
