Baileys Cheesecake Truffles

Baileys Cheesecake Truffles made with cream cheese, digestive biscuits, icing sugar and the famous Irish cream liquor, then coated in smooth milk chocolate and decorated with christmassy sprinkles and icing, a fabulous festive dessert for any party or celebration. Quick and easy to make, these delicious bites are pure heaven.

Ingredients

  • 2 cups digestive biscuits (graham crackers)
  • 150 g full-fat cream cheese
  • 2 tablespoon Baileys cream liquor
  • ¼ cup icing sugar (confectioners' sugar)
  • 200 g milk chocolate
  • sprinkles and icing to decorate - optional

Instructions

  1. Break the biscuits into pieces, then add them to a food processor and blitz until you get fine crumbs.
  2. Add the cream cheese, icing sugar and baileys, and blitz again to a get a smooth thick paste.
  3. With wet hands, shape 9 balls out of the mixture, and arrange them on a tray lined with non-stick paper.
  4. Chill the truffles for at least 30 minutes.
  5. Meanwhile, break the chocolate into pieces, and add them to a bowl set over a pan of simmering water.
  6. Allow the chocolate to melt completely, then coat each truffle into the chocolate.
  7. Once the chocolate has hardened, decorate with sprinkles and icing.

  • These truffles are so easy to make, and absolutely delicious! I used the regular digestive biscuits, but any other biscuits can be used, as long as they are plain. Make sure not to add too much cream, otherwise the truffles won't harden, then they will be a complete mess.
  • I used 2 tablespoons of baileys, and I thought that was good amount, the liquor is not overpowering, but you can tell it's there. It makes the subtle flavour even more spectacular.
  • The milk chocolate can be replaced with dark or white chocolate, it's entirely up to one's taste, just make sure it's nice and smooth before you coat the truffles, otherwise they won't look even. And there you go, a fantastic festive dessert for a delicious Christmas.
