- 1 dried and salted cod , 2 lb
- 12 medium potatoes , washed and peeled
- salt
- black pepper , freshly ground
- 5 tablespoons finely chopped flat-leaf parsley leaves
- 6 garlic cloves , minced
- ¾ cup olive oil

Instructions
- Completely immerse the cod in a large bath of cold water and let it soak for 3 days, changing the water several times a day.
- At the end of the three days of soaking, drain the cod, place it on a large board and hit it several times with a mallet to soften it.
- Cut the cod in 3, place it in a large pot, and cover it completely with cold water.
- Boil the cod over high heat for 5 minutes, then lower the heat and cook over low to medium heat, covered, until tender. It varies from 2 to 3 hours.
- Once the cod is very tender, add the potatoes cut in 2 and boil them until they are tender but do not crumble.
- Drain all the contents of the pot and separate the cod from the potatoes in a bowl.
- Remove all the bones and as much skin as possible from the cod, then cut it into small pieces and mix it with the potatoes.
- Using a wooden spoon, mix the cod and the potatoes until getting a kind of coarse puree.
- Season with salt, pepper, parsley and garlic and, continuing to mix with a wooden spoon, incorporate the olive oil in small quantities gradually.
- Serve immediately.
