Baked Apples

A classic comfort food, perfect for a cozy autumn day! These baked apples are filled with a warm and flavorful mixture of oats, nuts, and spices. Easy to make and so delicious, they're a healthy and satisfying treat.

Ingredients

  • 4 medium apples Granny Smith or Honeycrisp
  • 1 cup rolled oats
  • ½ cup unsweetened applesauce
  • ¼ cup chopped nuts
  • ¼ cup raisins or dried cranberries
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg optional
  • ¼ cup unsweetened almond milk or other plant-based milk
  • 1 tsp vanilla extract

  1. Preheat the Oven: First, preheat your oven to 350°F (175°C).
  2. Prepare the Apples: Core the apples, making sure to leave the bottom intact to hold the filling. You can use a small knife or an apple corer for this. Place the apples in a baking dish.
  3. Make the Filling: In a mixing bowl, combine the rolled oats, applesauce, chopped nuts, raisins, ground cinnamon, nutmeg (if using), almond milk, and vanilla extract. Mix until everything is well combined.
  4. Stuff the Apples: Spoon the oat mixture generously into each cored apple, packing it down slightly to fit.
  5. Bake: Cover the baking dish with foil and bake for 25-30 minutes, or until the apples are tender. Remove the foil for the last 10 minutes of baking to allow the topping to crisp up.
  6. Serve: Once baked, remove from the oven and let cool slightly. Serve warm, optionally sprinkled with additional cinnamon.

Notes

  • Choose firm apples that hold their shape well during baking, such as Fuji, Gala, or Braeburn.
  • Swap out nuts for seeds (like pumpkin or sunflower seeds) for a nut-free version.
  • Add a splash of maple syrup or honey for additional sweetness, if desired, while keeping it refined sugar-free.
  • Baked stuffed apples can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave before serving.
