Ingredients
- 4 medium apples Granny Smith or Honeycrisp
- 1 cup rolled oats
- ½ cup unsweetened applesauce
- ¼ cup chopped nuts
- ¼ cup raisins or dried cranberries
- 1 tsp ground cinnamon
- ¼ tsp nutmeg optional
- ¼ cup unsweetened almond milk or other plant-based milk
- 1 tsp vanilla extract
Instructions
- Preheat the Oven: First, preheat your oven to 350°F (175°C).
- Prepare the Apples: Core the apples, making sure to leave the bottom intact to hold the filling. You can use a small knife or an apple corer for this. Place the apples in a baking dish.
- Make the Filling: In a mixing bowl, combine the rolled oats, applesauce, chopped nuts, raisins, ground cinnamon, nutmeg (if using), almond milk, and vanilla extract. Mix until everything is well combined.
- Stuff the Apples: Spoon the oat mixture generously into each cored apple, packing it down slightly to fit.
- Bake: Cover the baking dish with foil and bake for 25-30 minutes, or until the apples are tender. Remove the foil for the last 10 minutes of baking to allow the topping to crisp up.
- Serve: Once baked, remove from the oven and let cool slightly. Serve warm, optionally sprinkled with additional cinnamon.
Notes
- Choose firm apples that hold their shape well during baking, such as Fuji, Gala, or Braeburn.
- Swap out nuts for seeds (like pumpkin or sunflower seeds) for a nut-free version.
- Add a splash of maple syrup or honey for additional sweetness, if desired, while keeping it refined sugar-free.
- Baked stuffed apples can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave before serving.
