  • 2 cups rolled oats old-fashioned
  • 1-1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups milk
  • 1 egg large
  • 1/3 cup maple syrup
  • 1 tablespoon butter melted, unsalted
  • 2 teaspoons vanilla paste or extract
  • 2 banana cut into 1/2 inch slices, ripe
  • 1-1/2 cup blueberries

Instructions

  1. Preheat oven 375 degrees F and spray an 8x8 pan with non-stick cooking spray.
  2. In a medium bowl mix together oats, ground cinnamon, baking powder, and kosher salt, set aside.
  3. In another bowl beat together milk, maple syrup, egg, melted butter, and vanilla bean paste.
  4. Take your prepared baking dish and cover the bottom with banana slices. Then sprinkle 3/4 cup blueberries over top bananas.
  5. Add oats to the dish and gently pour milk mixture over oats.
  6. Gently rap pan on the counter to make sure the milk has gone all the way through the oats.
  7. Sprinkle the top with blueberries and cook in the oven for 35 to 45 minutes until the top is golden brown and the oatmeal is set.
  8. If desired, drizzle the top with more maple syrup.
