Ingredients

  • 4 chicken breast halves , boneless, skinless
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 large eggs
  • 2 cups dry bread crumbs
  • 1 teaspoon dried basil leaves , optional
  • 1 teaspoon dried oregano , optional

Instructions

  1. Preheat oven to 350 degrees and spray a baking sheet with vegetable oil spray.
  2. Using a kitchen mallet, flatten the chicken breasts to even thickness.
  3. Season chicken with salt and black pepper.
  4. Add olive oil and eggs to a bowl and whisk until well combined.
  5. Add breadcrumbs to a second bowl with basil and oregano (if using).
  6. Dip the seasoned chicken into the eggs then into the breadcrumbs.
  7. Press breadcrumbs into chicken gently.
  8. Carefully add to baking sheet.
  9. Spray with additional vegetable oil, if desired.
  10. Bake for 30-35 minutes until cooked through to 165 degrees.
