Baked Brie Cheese with Strawberries

Ingredients

  • 1/2 pint strawberries plus a few for garnishing, diced
  • 1 tablespoon brown sugar or white sugar
  • 1 (12-ounces) Brie cheese anywhere from 8 to 14 ounces will work, wheel
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon mint or fresh basil, finely chopped
  • 1/3 cup candied almonds or a combination, roughly chopped, or pecans

Instructions

  1. Preheat the oven to 400ºF.
  2. Place the strawberries in a mixing bowl and sprinkle with sugar. Toss gently and allow it to sit while you bake the brie.
  3. Unwrap the brie and place it in a small baking dish. Score the top of the cheese making sure to only penetrate the rind.
  4. Bake for 15 minutes or until the cheese is melted (gently pat the cheese. It should feel soft and most likely will start to ooze. Remove from the oven.
  5. During the last 5-6 minutes of baking, add the balsamic vinegar, candied nuts, and mint (or basil) to the strawberry mixture and toss to combine.
  6. Top the hot brie with the strawberry mixture, garnish with a few whole strawberries and serve with an assortment of crackers and or a baguette.

Notes

  • Use parchment paper under the brie when baking for easier removal and serving.
  • The cheese is best served immediately after baking when soft and oozing.
  • Leftovers can be stored covered in the refrigerator for up to one day.
  • Try using a mix of berries for variation instead of strawberries alone.
  • Garnish with additional fresh strawberries for presentation.
