Baked Brie in Pie Crust

This Baked Brie in Pie Crust is an appetizer like no other! It's made with a whole wheel of melty brie cheese encased in a buttery, flaky, golden pie crust. It's perfect for the holidays with crackers, baguette slices, fruit, veggies, you name it.

Ingredients

  • 16 ounce brie wheel or 8 ounce *see note
  • 1 refrigerated pie crust
  • 1 egg
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 425˚F.
  2. Use a serrated knife to shave the top rind off of the wheel of brie. It is okay if there is a little bit left.
  3. Roll out the pie crust onto a flat surface. Place the wheel of brie, cut side down in the middle of the pie crust.Fold on edge up over the side of the wheel of brie. Move about 2 inches down and bring the side up and over again, creating a pleat. Continue moving around the wheel creating pleats until all edges of the pie crust are folded over the brie. The crust will not completely cover the brie, but that is okay since this will be the bottom.
  4. Line a rimmed baking sheet with parchment paper, then place the brie pleat side down (smooth side up) on the baking sheet.
  5. Crack the egg into a dish and scramble with a whisk. Add 1 tablespoon of water and whisk to combine. Use a pastry brush to brush the egg wash over the top of the pie crust.
  6. Bake for 18-22 minute, or until the pie crust is cooked through and the tops of the brie is shiny and golden brown.
  7. Serve warm alone or with crackers, fruit, veggies or a baguette.

Notes

  • Decorative Brie in Pie Crust
  • If you prefer a more decorative presentation, use an 8 ounce wheel of brie. 
  • Roll out the pie crust onto a flat surface. Place the wheel of brie, cut side up in the middle of the pie crust.
  • Fold on edge up over the side of the wheel of brie. Move about 2 inches down and bring the side up and over again, creating a pleat. Continue moving around the wheel creating pleats until all edges of the pie crust are folded over the brie. The brie should be completely encased in the pie crust. 
  • Filled Brie in Pie Crust
  • If you want to add additional flavors and fillings you can do so inside the pie crust or on top of the pie crust. To add inside the pie crust, just add the filling on top of the cut side of the brie before wrapping in the pie crust.
  • Here are some of our favorite filling options:
  • Shave off the top rind.

  • Place the brie pleat side up (smooth side down) on a parchment lined baking sheet.
  • Brush with egg wash and bake 20-25 minutes.
