Baked Chicken Parmesan

Baked Chicken Parmesan is coated in savory breadcrumbs & topped with gooey cheese. It’s an easy Italian-style dish perfect date night dinner or family meal!

Ingredients

  • 4 large chicken breasts sliced in half to make 8 thin breasts
  • ½ cup bread crumbs
  • ¼ cup Panko bread crumbs
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • ¼ cup Parmesan Cheese grated
  • 4 tablespoons unsalted butter melted
  • ¾ reduced-fat mozzarella cheese shredded
  • 1 cup marinara sauce
  • cooking spray

Instructions

  1. Preheat oven to 450 degrees F. Spray a baking sheet with non-stick cooking spray and set aside.
  2. Combine the bread crumbs, panko bread crumbs, basil, oregano, pepper, salt, and Parmesan cheese in a shallow bowl.
  3. In a small bowl melt the butter.
  4. Dip chicken breasts in butter and then dredge both sides in the bread crumb mixture.
  5. Place breaded chicken onto the prepared baking sheet. Spray tops of chicken with more cooking spray. (This helps the chicken get nice and golden brown.)
  6. Bake for 10 minutes. Then flip the chicken over and bake for another 5 minutes.
  7. Carefully remove baking sheet from oven. Top each chicken breast with 1 tablespoon of marinara and then 1 1/2 tablespoons mozzarella cheese. Return to the oven and bake for 5 more minutes.
  8. Remove chicken parmesan from the oven. Serve warm with salad or your favorite pasta.
