Ingredients

  • 6 chicken thigh bone-in, skin-on
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 teaspoon lemon zest
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic minced
  • 1 1/2 teaspoons oregano dried
  • 1 teaspoon paprika I prefer to use smoked paprika
  • 2 tablespoons parsley chopped, fresh
  • lemon wedges for garnish
  • cooking spray

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Place the olive oil, lemon juice, lemon zest, salt, pepper, garlic, oregano and paprika in a large bowl. Whisk to combine.
  3. Add the chicken the bowl; toss to coat with the marinade. Cover and refrigerate for at least 30 minutes, or up to 24 hours.
  4. Coat a sheet pan with cooking spray. Arrange the chicken thighs on the pan in a single layer.
  5. Bake for 40-45 minutes or until chicken is browned and cooked through.
  6. Sprinkle with parsley. Garnish with lemon wedges and serve.

Notes

  • Bone-in, skin-on chicken thighs are recommended for juicier meat and crispy skin; boneless thighs can be used but need less cooking time.
  • For extra flavor, reserve some marinade before adding chicken to drizzle over finished thighs.
  • To achieve crispier skin, broil the chicken thighs for a few minutes before serving.
