Ingredients

  • 6 chicken thighs bone-in with skin
  • 2 tablespoons olive oil
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

  1. Preheat oven to 425°F. Line a baking sheet with aluminum foil and place a cooling rack on top. Set aside.
  2. Combine the rosemary, thyme, oregano, garlic powder, salt, and pepper in a small bowl.
  3. Dry the chicken thighs with a paper towel. Drizzle the chicken thighs with olive oil and season with the spice mix.
  4. Place the chicken thighs on the cooling rack on the baking sheet.
  5. Bake for 35-40 minutes or until the internal temperature reaches 165°F.
  6. For extra crispy skin, broil the chicken on high for 2-3 minutes immediately prior to serving.

Notes

  • Storage: Store baked chicken thighs in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
  • Use evenly-sized chicken thighs so they cook at the same time.
  • Be sure to pat your chicken thighs dry. Removing moisture before cooking allows the chicken to crisp up better. 
  • When checking the internal temperature of the chicken, stick your thermometer into the thickest part.
