Ingredients

  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/4 cup flour
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 large eggs
  • 1 cup bread crumbs
  • 1 cup Panko bread crumbs
  • 1 pound cod fillets , cut into 4 pieces

Instructions

  1. Preheat oven to 400 degrees.
  2. Mix flour with salt, pepper, paprika, and garlic powder.
  3. Beat eggs in a second bowl.
  4. Mix panko and breadcrumbs in a third bowl.
  5. Coat fish in flour mixture then in eggs then in breadcrumbs and place on a baking sheet.
  6. Spray with vegetable oil spray and bake for 12-15 minutes until browned.
