Ingredients

  • 4 6-ounce cod fillets
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley finely chopped
  • 1 lemon cut into wedges for serving

  1. Preheat the oven to 400 degrees F and lightly grease a baking sheet.
  2. Pat the cod fillets dry with paper towels and place them on the prepared baking sheet.
  3. In a small bowl, mix together the panko breadcrumbs, olive oil, garlic powder, paprika, salt, and black pepper.
  4. Sprinkle the panko mixture evenly over the cod fillets, pressing gently to adhere.
  5. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the fish flakes easily with a fork.
  6. Garnish with fresh parsley and serve immediately with lemon wedges on the side.
