Baked eggs nestled in a bed of creamy spinach flavoured with chorizo and feta cheese makes the ultimate lazy brunch dish.

Ingredients

Servings
  • 1 onion finely chopped
  • 1 garlic finely chopped, clove
  • 1 chorizo cubed, 200g
  • 800 g baby spinach washed and dried, 2 large bags
  • 1/2-3/4 cup cream
  • 1 cup feta cheese cubed
  • 1 teaspoon lemon juice
  • salt to taste
  • black pepper to taste
  • 1-2 egg per person

Instructions

  1. Pre-heat the oven to 200°c.
  2. Fry the onion and garlic in a large frying pan until soft and translucent.
  3. Add the chorizo and fry until golden brown.
  4. Add the spinach and allow to wilt before pouring in the cream. Allow to cook for 5 minutes until the spinach is cooked and the cream has reduced slightly.
  5. Add the feta, lemon juice and seasoning.
  6. With a spoon, make hollows in the mixture and break in the eggs.
  7. Season the eggs with salt and pepper then place the pan in the oven.
  8. Allow to bake for 5-8 minutes (or until the eggs are done to your preference).
  9. Remove from the oven and serve immediately.
