Baked Feta Pasta

Ingredients

  • 1 1/3 Cups feta cheese in a block
  • 1/2 Cup black olives
  • 2 Pints Cherry or grape tomatoes
  • 3 Cloves garlic smashed
  • 1 small onion diced
  • 1 lemon zested and juiced (approx 2 Tablespoons)
  • 1 Tablespoon Greek seasoning
  • 1 teaspoon pepper
  • 1/2 Cup olive oil
  • 2 Cups pasta uncooked

Instructions

  1. Preheat oven to 400°F.
  2. Place the feta cheese in the center of a large oblong casserole dish.
  3. Add cherry tomatoes, black olives, garlic, and onion so that they surround the feta cheese.
  4. Add lemon zest, lemon juice, Greek seasoning, and pepper.
  5. Drizzle with olive oil and then stir to coat the vegetables.
  6. Bake for 45-50 minutes. At the 35 min mark, prepare your pasta. Drain but do not rinse.
  7. Remove the baked pasta and vegetables from the oven and immediately add in the drained pasta. Stir to melt the cheese and coat the pasta.
