Baked Manicotti

Baked Manicotti is a hearty family dinner of pasta shells stuffed cheese, topped with ground beef and a simple homemade marinara sauce.

Ingredients

  • 1 lb ground beef
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 Tablespoon dried basil
  • 1 Tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 ounces mozzarella cheese shredded
  • 1 package manicotti shells 12 pieces
  • 3/4 cup parmesan divided
  • 1 egg
  • 16 ounces ricotta cheese
  • 14.5 ounces can diced tomatoes
  • 28 ounces can crushed tomatoes
  • 2 Tablespoons fresh basil

  1. In a large skillet fry the ground beef and onion until the meat is no longer pink.
  2. Add the minced garlic along with the basil, oregano, salt and pepper.
  3. Add crushed and diced tomatoes. Simmer 20-30 minutes.
  4. While the marinara sauce simmers prepare the manicotti shells. Add the shells to a large rectangular pan and fill it with hot tap water, as hot as you can make it. Let the shells soak for 20-30 minutes.
  5. Mix ricotta cheese, egg, and 1/2 cup of the Parmesan cheese in a bowl. Cut the fresh basil and blend in with ricotta mixture.
  6. Drain the manicotti shells.
  7. Preheat the oven to 350 F°.
  8. Scoop half the sauce into bottom of cast iron skillet or rectangular baking pan.
  9. Fill the shells with ricotta mixture and place in skillet. Put the filling in a ziploc bag, cut the corner off and use the bag to pipe filling into the shells. It is easiest to fill one half, then turn the shell and fill the other half.
  10. Cover the stuffed manicotti shells with the remaining sauce. Top with shredded mozzarella and the remaining ¼ cup parmesan.
  11. Bake at 350° for 55-60 minutes or until cheese is starting to turn golden brown.

Notes

  • You can make up to a day ahead of time and refrigerate, tightly covered, until ready to bake.
