Baked New Potatoes with Herbs and Mature Cheese
Baked New Potatoes are slow-roasted whole until soft, then gently mashed and topped with farmer’s cheese and a fresh green onion and herb dressing. The dressing, made with lime juice, olive oil, salt, and pepper, brightens the mild potatoes, while the mature cheese adds a rich, tangy note. Fresh herbs like basil and thyme enhance the flavors, making a straightforward side dish with bright herbal, creamy, and slightly tangy elements.
Ingredients
- 2 new potato medium
- 50 g farmer's cheese (or feta, cheddar, etc)
- 1 bunch green onions
- 1 celery stick
- 10 g basil fresh
- 1 prig of thyme
- 1/4 lime
- 15 ml olive oil
- salt
- black pepper
Instructions
- Wash the potatoes well and bake in a preheated oven at 180 °C (356 °F) for 30 minutes or until done.
- Chop the green onions, mix with the juice from a quarter of a lime and the olive oil and season with salt and pepper. For the spice lovers, you can add chili or chili flakes.
- Remove the potatoes from the oven, mash them a little, add the cheese and then the green onion dressing. (You can also use other greens, depending on the season and what you have on hand.)
